Make Cookie Sandwiches with Dogtown Pizza

Making cookie sandwiches is a fun activity for when the weather’s just a little too cold to go outside. These are a great edible craft project for the kiddos to make during snow days and they can double as a handmade gift for the parties and family get-togethers coming up this holiday season! Remember to follow the directions on the back of our cookie bag for perfectly baked Dogtown Pizza cookies. Also, make sure that cookies cool completely before making these sandwiches.

Gourmet Chocolate Chip Cookie Sandwiches

Use our chocolate chip cookies to make these tasty sandwiches!

Caramel with Nuts

Heat a tub of caramel apple dip until it’s spreadable. Use a butter knife to spread the caramel between two Dogtown cookies, then roll the edges in chopped nuts. This works with any caramel and nut combination you like: chocolate caramel and almonds? Sure! Salted caramel and peanuts? Yes, please! Vanilla caramel and pumpkin seeds? Well, pumpkin seeds aren’t nuts, but that sounds great too!

Nutella and Sprinkles

Spread Nutella between two Dogtown Gourmet Chocolate Chip Cookies and roll the edges in sprinkles. Choose sprinkles based on the kids’ favorite color, flavor, or coordinate with the holiday. Not a fan of nutella? Use vanilla frosting instead!

Peanut Butter Whipped Frosting

If you love peanut butter and you love buttercream, this peanut butter whipped frosting is for you!

What You Will Need

1 stick of butter, softened

½ cup peanut butter (creamy works better than crunch, but if you love that crunchy texture, you do you!)

1 teaspoon vanilla extract

A pinch of salt

4 cups of powdered sugar

A little dairy or nut milk to get the right consistency.

Directions

Beat the butter with an electric mixer until it’s fluffy, then add peanut butter, vanilla and salt.

Once all ingredients are incorporated, slowly pour the powdered sugar into the bowl while still beating with the mixer.

If the mixture is too thick, add your milk one teaspoon at a time until it has the right consistency to spread between two delicious Dogtown cookies!

Vanilla Frosting

Buttercream is best, but we’re not above just cracking open a tub of frosting when that craving for Dogtown cookie sandwiches hits! Out of all the packaged frostings we tried on Dogtown cookies, we were surprised to find that vanilla was the best of the bunch, with white chocolate coming in second.

Pumpkin Cheesecake Filling

What You Will Need

12 ounces cream cheese (1 block)

1 stick of butter, softened

2 teaspoons pumpkin spice seasoning

4 cups powdered sugar

1/3 cup pumpkin puree

Directions

Start your electric mixer and combine the butter and cream cheese until the mixture is fluffy. Next add the pumpkin spice, powdered sugar, and once those ingredients are incorporated, add the pumpkin puree. Spread this between two Dogtown cookies—if you can stop yourself from eating it straight from the bowl with a spoon!

Cinnamon Buttercream

This is a basic buttercream recipe, with a shot of cinnamon, and we think it pairs perfectly with Dogtown White Chocolate Raisin Chunk Cookies!

What You Will Need

2 sticks of butter, softened

1 teaspoon vanilla extract

A pinch of salt

4 cups powdered sugar

A little dairy or nut milk for consistency

1 teaspoon cinnamon

Directions

Beat the butter with an electric mixer until it’s fluffy, then add the vanilla and salt. Once all ingredients are incorporated, slowly pour in the powdered sugar while continuing to beat with the mixer. If the mixture is too thick, add your milk one teaspoon at a time until it has the right consistency. Finally, add 1 teaspoon of cinnamon.

You’ll want to let this one rest for an hour or two, so the cinnamon flavor has a chance to blend into the buttercream—it’s so hard but trust us it’s worth the wait!—then spread your frosting between two cookies and devour them as a celebration of your restraint.
